FOODIE WEEKEND - Low calorie Baked Chocolate Mousse

Sounds heavenly, isn’t it?  Chocolate and low calorie just don’t go hand in hand but today I will share with you this recipe that has about 270 calories with less than 10 grams of fat a pop!  Mind you that this calories/fat is not including the vanilla ice cream that is optional.


Ingredients (makes 10 portions)
10 disposable baking cups
Some butter and caster sugar to coat and dust the cups
180 gm of dark chocolate
150 ml of low fat creme
4 egg yolks
6 egg whites
1 teaspoon of vanilla essence
6 tablespoon of caster sugar
Icing sugar for dusting
Vanilla ice cream (optional)
Method
Pre-heat the oven to 220 degrees celcius.  Coat the baking cup with a little butter and dust with some caster sugar.
 Melt the chocolate and crème in a sauce pan over low heat until smooth.  
Remove from heat and add into the mixture the vanilla essence and egg yolks and stir until creamy. 
Beat the egg white until fluffy (like you would do a meringue) and add 6 tablespoons of  caster sugar, beat until glossy.   
Fold in the egg white mixture into the saucepan of chocolate. 
Fill the baking cup until just below the rim and bake for 8 to 10 minutes.

Don’t be alarm if the mousse deflates after removing from the oven, which is normal.  Serve hot/warm with a scoop of vanilla ice cream or some icing sugar dusting.  Have fun trying and enjoy eating without guilt!
